The region's temperate climate, with its cold winters and warm summers, promotes optimal grape ripening. Biodynamic practices implemented in the vineyard help preserve biodiversity and enrich the soil, ensuring healthy and expressive grapes. Each harvest is carried out by hand, in order to select only the best bunches for vinification.

    Vinification and aging

    Winemaking at Cellier des Templiers is a meticulously orchestrated process, beginning with the hand-harvesting of the grapes. After gentle pressing, the juice is clarified and vinified in stainless steel tanks to preserve its freshness and the expression of the terroir. Malolactic fermentation is often carried out to add further roundness. Aging on fine lees, which can last several months, allows the wine's aromatic complexity to develop. The bottles are then disgorged by hand, respecting the Champagne tradition, to guarantee a high-quality Champagne.
