Vinification and aging

Winemaking at Domaine Faiveley is a meticulous process, blending tradition and innovation. After the grapes are hand-harvested, they are carefully destemmed and crushed. Fermentation takes place in temperature-controlled tanks, allowing for precise temperature management and the delicate extraction of aromas. Aging in oak barrels, some of which are new, lasts approximately 12 to 16 months. This allows the wine to develop aromatic complexity while harmoniously integrating the oak notes. Each step is carefully considered to enhance the expression of the terroir.
