The estate was renamed Domaine Tollot Beaut and in 1921 became one of the first estates to bottle its wines. Alexandre then began exporting his production to the United States. Today, the estate24 hectaresThe estate spans the four communes of Chorey-les-Beaune, Beaune, Savigny-les-Beaune, and Aloxe-Corton and is managed by cousins Nathalie, Olivier, and Jean-Paul Tollot. The vineyard boasts a significant number of old vines of the exceptional Pinot Noir variety. The cellar contains barrels dating back over 250 years and is meticulously preserved. Since 2016, theTollot familyalso holds a monopoly in the village of Chorey-les-Beaune. The wines ofTollot-Beaut Estateare renowned and highly sought after due to their high quality and limited production.

Organic viticulture and quality plots
ThereTollot familyplaces great importance on respecting their terroir and the vines are cultivated withbiologicallyNo inputs are used in the vineyard and yields are limited. This promotes the production of full-bodied and highly aromatic wines. Among the24 hectares planted22 hectares are dedicated to the region's emblematic red grape variety, Pinot Noir, and 2 hectares are devoted to the white grape variety, Chardonnay. The average age of the vines is 40 years, but some are older. The plots receive individualized treatment to ensure quality and precise monitoring. Tilling is carried out every year, and a layer of soil is pushed back around the base of the vines to protect them from the cold in winter. In the spring, the soil surrounding the vines is loosened to allow for aeration. The harvest is done by hand by the family and their team, and the grapes are transported carefully to avoid being crushed before reaching the tanks. Great storage potential
Following the harvest, fermentation takes place in stainless steel tanks for 10 to 12 days. Regular pump-overs are performed. For the Corton-Charlemagne cuvée, the Chardonnay grapes are pressed using a pneumatic press before undergoing a slow fermentation at 17° to 18°C. The wine is then transferred to barrels where it completes alcoholic and malolactic fermentation. It will remain there for approximately 16 months. This is a powerful and complex white wine with a rich aromatic profile.
The red wines ofTollot-Beaut EstateThe wines are aged for up to 18 months in new oak barrels, up to 60% of which are new for the Grand Crus. The wood comes from the forests of Bertranges and Allier. Chorey-lès-Beaune is charming, elegant, and complex with notes of prune and cherry. Aloxe-Corton is more masculine, with aromas of red fruit, dark earth, and graphite. The Corton and Corton-Bressandes cuvées are related; the former is more powerful, while the latter is more fragrant and harmonious. Finally, the powerful and noble Beaune 1er Cru Clos du Roi offers a very rich nose of red and black fruit and flowers.
