Between tradition and transmission

From organic farming to biodynamic farming
A gradual transition
Benoît Riffault took over the winemaking at the vineyards, following in the footsteps of his father-in-law, Gérard Boudot. For three years, they worked together to make the most of these exceptional terroirs. Little by little, Benoît became aware of the importance of preserving the heritage left by past generations and the significance of terroir in winemaking. He then decided to convert the estate intoorganic farmingHe obtained certification in 2006 before starting to work inbiodynamicsIn 2010, the estate's core principles were established: meticulous care of the vines, regular maintenance of soil health, and a focus on plant material whose energy is transferred to the grapes and ultimately to the wine. This transition was accompanied by an expansion of the vineyard. Domaine Etienne Sauzet now covers 14 hectares (10 hectares in Puligny and 4 hectares in the Hautes Côtes de Beaune).
