    Owner and history

    The Bougros vineyard, at the westernmost edge of the Chablis Grand Cru vineyards, benefits from a southwest exposure and deep marl and clay soils, imparting richness and structure to the wines. Domaine William Fèvre owns 6.23 hectares in Bougros, representing 49% of the appellation, making it a key player in the terroir. The entire vineyard rests on Kimmeridgian soil, rich in marine fossils, which gives the wines a characteristic saline minerality. Chablis Grand Cru Bougros is distinguished by its perfect balance between power and finesse, with a full and persistent palate. Sustainable farming practices ensure respect for the terroir and the authentic expression of each vintage.

    Vinification and aging

    Domaine William Fèvre is committed to winemaking that respects both the fruit and the terroir. The grapes are harvested by hand, allowing for rigorous selection. Pneumatic pressing is carried out with care to preserve the aromatic purity of the Chardonnay. Fermentation takes place partly in French oak barrels, averaging six years old, to add complexity and structure to the wine without masking the characteristic minerality of the terroir.
    The 2023 Chablis Grand Cru Bougros is aged for 14 to 15 months, including 5 to 6 months on its fine lees. Approximately 50 to 60% of the wine is aged in oak barrels, with the remainder kept in stainless steel tanks to preserve the freshness and precision of the fruit. This meticulous aging allows the wine to develop a full and silky texture, while maintaining superb mineral tension.
