Vinification and aging

Winemaking at Domaine William Fèvre is a meticulous process designed to preserve the purity of the fruit. After the grapes are hand-harvested, they are gently pressed to extract the juice. Fermentation takes place in stainless steel tanks, preserving freshness and aromatic expression. The wine is then aged for 12 months in oak barrels, a percentage of which are new, adding a subtle touch of oak without masking the wine's minerality.
