    Vinification and aging

    Winemaking at Domaine Faiveley is a true art. The grapes, carefully hand-harvested, are destemmed before being vinified in wooden vats. Fermentation and maceration take place in a controlled environment, allowing for a gentle extraction of aromas and tannins. Aging occurs in oak barrels, some of which are new, for 12 to 18 months.
