Vinification and aging

The winemaking process for Chambertin-Clos-de-Bèze is meticulous, respecting Burgundian traditions. The carefully selected grapes are destemmed before being fermented in wooden vats. This choice of materials allows for micro-oxygenation, promoting the expression of the terroir. The wine is then aged on its fine lees in oak barrels, some of which are new, to add complexity and structure. This process, which lasts several months, harmonizes the aromas and softens the tannins, resulting in a wine of great finesse and excellent aging potential.
