Vinification and aging

Winemaking at Domaine Faiveley is an art that blends tradition and modernity. The grapes are harvested by hand, then destemmed before being placed in vats. Fermentation takes place in wooden vats, allowing for a gentle extraction of tannins. Aging, the duration of which varies depending on the vintage, occurs in oak barrels, some of which are renewed each year. This imparts a complexity and depth to the wines that appeal to connoisseurs. The bottles are then carefully aged in the cellar, allowing the wine to refine before being released to the market.
