Vinification and aging

The winemaking process for this Charmes-Chambertin Grand Cru begins with the hand-harvesting of carefully selected grapes. After partial destemming, the berries are placed in vats for a cold pre-fermentation maceration, allowing for the extraction of delicate aromas. Fermentation occurs with indigenous yeasts, promoting an authentic expression of the terroir. Aging in oak barrels, some of which are new, lasts approximately 15 to 18 months, allowing the wine to develop its complexity while subtly integrating the oak notes. Each step is carried out with precision to guarantee a wine of great finesse.
