Vinification and aging

Winemaking at Domaine Au Bon Climat is a delicate process, blending tradition and innovation. The grapes are carefully hand-harvested and then sorted to guarantee exceptional quality. After gentle crushing, fermentation takes place in stainless steel tanks, allowing for a gentle extraction of aromas. Aging in oak barrels, some of which are new, adds further complexity to the wine. This process respects the intrinsic characteristics of Pinot Noir, promoting the expression of the terroir. Each step is designed to enhance the fruit, resulting in wines of great finesse and depth.
