Each year the estate produces approximately 30,000 certified bottles.biodynamics.
Dominique Lucas is originally from Burgundy. He learned the trade fromLalou Bize-Leroy(Former co-manager of theRomanée-ContiIt was she who passed on to him the precepts of theBiodynamicsDrawing on his experience and expertise acquired from the best, the passionate winemaker quickly established himself among the best in the region.

High standards, expertise and biodynamics
THEParadise Estateis part of a highly environmentally conscious approach by applying the principles ofBiodynamicsAfter manual harvesting with selective sorting, the grapes are vinified slowly and traditionally in barrels, egg-shaped vats, and amphorae. Work in the most delicate vineyards is carried out using horses: their passage through the heart of the vineyards causes less damage to the soil and plant material.
Yields are kept very low across the entire estate to produce the most precise and balanced wines possible. No herbicides, chemical fertilizers, or other plant protection products are used in the vineyard. Treatments are carried out using medicinal plants and essential oils sourced directly from the mountains surrounding the vineyard. The lunar calendar is strictly followed for all interventions in the vineyard, during vinification, and at bottling. The principles of theBiodynamicsare strictly respected, with respect for the vines, traditions and people!

Regional Heritage Conservation
The wines ofParadise Estateare found on the menus of the best restaurants in France.Chasselas, Chardonnay, Savagnin, Sauvignon, Pinot Gris, Altesse, Cheninas well as theGamaymake up the grape varieties planted in the vineyard.
The wines are precise thanks to a very long maceration and relatively short aging periods. The aim is to bring out the best in the regional grape varieties.
The Quintessence cuvée comes from a leased plot. Dominique Lucas wanted to save these few hectares of vines from being uprooted. Crépy is so close to Geneva that the appellation area suffers from real estate pressure.
Everything in the estate's wines is done to showcase the vineyard's terroir. From biodynamic farming and the use of local water in the vats, to the grape varieties planted and a meticulous winemaking process, everything is done to achieve the finest wines. The estate's wines contain hidden gems just waiting to be discovered!
