Vinification and aging

The winemaking process for Opus One 2007 is meticulous, blending tradition and modern technology. The grapes are hand-harvested and then carefully sorted to select only the very best. After fermentation in stainless steel tanks, the wine is aged in French oak barrels, some of which are new, for 16 to 18 months. This aging process allows subtle woody aromas to develop while preserving the purity of the fruit. Bottling is done without filtration, in order to retain all the complexity and elegance of this great wine.
