    Vinification and aging

    The vinification of the 2019 Pagodes de Cos takes place in temperature-controlled stainless steel tanks for optimal temperature regulation. The grapes are carefully hand-sorted before being destemmed and crushed. Alcoholic fermentation is followed by malolactic fermentation, which brings roundness and smoothness to the wine. Aging occurs in oak barrels, some of which are new, for approximately 12 months, in order to refine the tannins and impart subtle aromas from aging. This traditional method, respectful of the fruit, allows the full typicity of the Saint-Estèphe terroir to be revealed.
