    Owner and history

    Samuel Billaud is a virtuoso of Chardonnay. He showcases the character of Chablis' soils: rich in Kimmeridgian marl. Attentive to environmental preservation, he draws inspiration from organic practices and applies them to his vineyards.

    Vinification and aging

    - Hand-harvested at perfect ripeness
    - Direct pressing (pneumatic press) followed by desliming
    - Fermentation in 450-litre barrels
    - Aged in large containers then in stainless steel tanks
