Vinification and aging

Winemaking at Domaine Pierre Damoy is a meticulous process that respects Burgundian traditions while incorporating modern techniques. The harvest is done by hand, ensuring rigorous selection of the grape bunches. After partial destemming, the grapes are fermented in wooden and stainless steel vats, allowing for gentle tannin extraction. Aging takes place in oak barrels, some of which are new, for 12 to 18 months, depending on the cuvée. This method gives the wine an elegant structure while preserving the authenticity of the terroir.
