Vinification and aging

Winemaking at Domaine Joseph Faiveley is an art in itself. The carefully selected grapes are vinified in stainless steel tanks to preserve the purity of their aromas. Aging takes place in oak barrels, some of which are new, to add further complexity to the wine without masking its terroir. This process, combined with regular lees stirring, results in a velvety texture and aromatic richness. Each step is designed to respect the wine's identity while giving it the structure necessary to age gracefully.
