Vinification and aging

Winemaking at Domaine Faiveley is carried out in accordance with Burgundian traditions. After a carefully selected, hand-harvested grape selection, the grapes are destemmed and vinified in wooden vats. Fermentation takes place at a controlled temperature to preserve the aromas. Aging occurs in oak barrels, some of which are new, to impart a subtle oak influence. This long and meticulous process results in wines rich in flavor and texture, ready to improve with age.
