    Vinification and aging

    Winemaking at Domaine Faiveley is a meticulous art, respecting Burgundian traditions. After a manual harvest, the grapes are gently pressed. Fermentation takes place in stainless steel tanks to preserve the freshness of the Chardonnay, followed by aging in oak barrels, some of which are new. This 12-month stage allows the wine to refine while developing aromatic complexity. The estate favors aging on fine lees, thus enriching the wine with silky textures and remarkable depth.
