Description

Located in the Var region, in the heart of the Massif des Maures, Château Peyrassol is one of the leading names in the Côtes-de-Provence appellation. Its XIIIE Rosé, created to celebrate Philippe Austruy 's 20 years at the helm of the estate, pays homage to the Templar origins of the property. This wine faithfully reflects Peyrassol's high-altitude terroir, with a characteristic freshness and understated elegance. Its bottle, with an exclusive design by Pierre Yovanovitch, embodies the perfect blend of tradition and modernity. Authentic and unpretentious, this cuvée showcases the fruit in all its purity.

Tasting notes

The 2022 XIIIE vintage captivates with its pale, rose-petal hue. The expressive nose reveals a bouquet of delicate floral aromas and fresh red berries, offering a typically Provençal, ethereal impression. On the palate, the attack is gentle, the texture velvety, and the whole unfolds into a silky, thirst-quenching mouthfeel. A refined, saline finish pleasantly prolongs the tasting, confirming the balance and elegance of this characterful rosé.

Food & wine pairings

This rosé pairs perfectly with sea bream tartare, shrimp salad or fresh goat cheese with herbs.

The Château Peyrassol vineyard rests on clay and limestone soils originating from the inland valleys of the Massif des Maures. Certain plots, carefully selected for their northern exposure and depth, impart a precious freshness to the vines. The grapes destined for the XIIIE cuvée come from these unique terroirs, ideal for slow and even ripening. Cultivated using organic farming methods, the vineyard fully respects the natural balance of the soil and the vines, guaranteeing grapes of impeccable quality, perfect for crafting subtle, balanced, and refreshing rosé wines.

Owner and history

Since acquiring the Commanderie de Peyrassol in 2001, Philippe Austruy has worked with passion to enhance this historic estate. An aesthete and committed entrepreneur, he has breathed new life into the vineyard by initiating a conversion to organic farming and modernizing the facilities without ever betraying the spirit of the place. His ambition: to produce wines that express the richness of the Provençal terroir with sincerity and elegance. Through cuvées like XIIIE, he celebrates both the history of the estate and his contemporary vision of wine, always guided by authenticity, precision, and sustainability.

Vinification and aging

The vinification of the 2022 XIIIE vintage is based on precise plot selections, established according to rigorous ripeness controls. The harvest took place respecting natural rhythms and was largely completed in early September. The grapes were gently pressed using pneumatic pressing before fermentation in temperature-controlled stainless steel tanks. Aging continued for a few months on fine lees to preserve all the aromatic freshness of the wine. This process guarantees a pure, straightforward, and flavorful profile, revealing the full expression of the fruit without any alteration.
