Château Canon La Gaffelière is currently managed by the Malet Roquefort family, who have preserved the estate's heritage while infusing it with their passion for winemaking. Since acquiring the property in 2008, they have undertaken significant efforts to modernize viticultural and winemaking practices, while respecting the terroir's unique character. Their commitment to excellence is reflected in every bottle, making this estate a leading name in the Saint-Émilion appellation.

Vinification and aging

Winemaking at Château Canon La Gaffelière is a meticulous process, blending tradition and innovation. The grapes are harvested by hand, ensuring rigorous selection. After careful destemming, alcoholic fermentation takes place in temperature-controlled stainless steel tanks, allowing for optimal temperature management. The wine is then aged in oak barrels, some of which are new, for 12 to 18 months, imparting complexity and roundness. This meticulous attention to detail at every stage of production reveals the quintessence of the Saint-Émilion terroir.
