The vineyard of Château Pavie stretches across well-exposed slopes, benefiting from a microclimate ideal for ripening grapes. Owner and history

Gérard Perse, owner of Château Pavia, since 1998, has managed to restore the prestige of this domaine emblematic of Saint-Émilion. Visionary and passionate, he implemented environmentally friendly viticultural practices while integrating modern winemaking techniques. His commitment to excellence is reflected in the quality of the wines produced, which quickly gained international renown. Under his leadership, the domaine has become a symbol of the Bordeaux way of life.

Vinification and aging

Winemaking at Château Pavie is a meticulous process, blending tradition and innovation. The grapes are carefully sorted before fermentation in temperature-controlled vats, allowing for optimal temperature control. After fermentation, the wine is aged in oak barrels, some of which are renewed each year to add complexity and roundness.
