Caviar made in France, really?
With 23 tonnes per year, France is today the third largest producer of caviar in the worldSince 2006, only caviar from farmed sturgeon is allowed, as wild sturgeon has become a protected species.
It was thanks to an exchange program with the Soviet Union in the 1980s that sturgeon were reintroduced to France. Caviar therefore no longer comes solely from Russia and Kazakhstan, but also from France. In 2014Caviar de Neuvic has produced more than 1.5 tonnes and plans to reach 6 tonnes in 2018.
